De Bosses s.r.l. was founded in 1999 as the result of the passion for high-quality cured meats shared by three businessmen friends who – working together with the Municipality of Saint-Rhémy-en-Bosses – have  embraced a project to promote and spread a unique, prized product, with a history that goes back to 1397 and which is closely linked to the popular culture and traditions of this area of the Aosta Valle: the Vallée d’Aoste Jambon de Bosses DOP ham.

The Jambon de Bosses ham is the prince of Aosta dried meats; its production methods need neither be described nor justified, it is the strict DOP regulations which guarantee top quality throughout all the phases of work: from the curing with salt with local herbs, to manual salting, to the seasoning on a bed of hay, to the deboning with manual binding, to the continual checks of all the phases, starting with the raising of the pigs, to the branding by the checking bodies which are accredited by the Ministry of Farming Policy. The ham has in its taste the tradition of salting meat in Gran San Bernardo, documented from 1397 in the archives of the hospice on the mountain of the same name. It was produced then as it is now, with simple and ancient moves handed down for generations, ‘viou i tzoveno', from the old to the young.

The firm has as its goal, as well as the production of JAMBON DE BOSSES DOP, the promotion of the traditional cured meat products of Aosta.

De Bosses is a young and dynamic company, which has made a name for itself in the marketplace in Aosta, Italy and Europe (it exports to France, Switzerland, Germany and Belgium) with occasional forrays into Asian countries such as China, because of the high quality of its production.
