Cave Des Onze Communes Soc.Coop.

The Cave des Onze Communes is a wine-making cooperative which produces and sells local wines since the 1990’s harvest. Its vineyards, spread over eleven local villages (Quart, Saint-Christophe, Aosta, Sarre, Saint-Pierre, Villeneuve, Introd, Aymavilles, Jovençan, Gressan and Charvensod), cover a surface of around 70 hectares, worked by 150 owner-members. The cooperative produce over 500,000 bottles a year and sales are both retail and to wholesalers.

At the cooperative headquarter there is an evocative shop which is a small museum of the local wine-making art.

Amongst the wines, there are twenty-two labels which are “denominazione di originecontrollata” (DOC) and two different kinds of table wine.

The famous Torrette, a DOC wine, is produced here – it is mainly produced from the native Petit Rouge vine and has a dry and arid taste, and whose aroma develops with ageing in the barriques, small barrels made of French oak (Torrette Supérieur). Torrette is accompanied by nine other red wines: Fumin, Petit Rouge, Pinot Noir (also available in the barrique version), Gamay, Cornalin, Mayolet and the AnciensCepages.Again, made using Torrette grapes, a refined level of rosé is produced.

There is also an extensive range of whites: Müller Thurgau, Petite Arvine, Chardonnay, Pinot Gris,Gewürztraminer, Viti Alte and Flétry Muscat Petit Grain.

The table wine are the Rouge Bouquetin and the Blanc Perdrix. You can find also five qualities of grappa.
